We had sauerbraten today – didn’t get a photo of it, but managed to snap one of the latkes before they were all inhaled. I had planned to use the shredder attachment for the mixer, but the recipe I found on Cooks Illustrated used a food processor, first with a disk to shred all the potatoes, then the blade to process half the potatoes plus an onion, and I couldn’t see having to clean up both. The potato-onion mixture was drained, mixed with an egg and fried – yum!

  1. I can smell those latkes. Mmmm. you know, if you add some Swiss cheese, you get the comfort food of my youth – roesti. Heaven on a plate!!

  2. When we were young we always called them potato pancakes. They were soooo good. My girlfriend’s mom added chopped parsley to hers. My girlfriend and I would try to talk her out of at least one so we’d have enough strength to continue playing cowboys and indians. πŸ™‚
